Getting rid of a stippled ceiling

We've decided we don't like the look of the stippled ceiling throughout our house. We'd prefer a simple, smooth finish. How would you recommend that we proceed? I was planning to try using a drywall sander, or just putting up new drywall on the ceiling. What problems can I anticipate? Thanks for your help.
